What are Loaded French Fries
Imagine Loaded French Fries: hot, crispy fries piled high with ALL the good stuff. What started as simple street food has turned into a full-blown global comfort food obsession.
Loaded French Fries are the perfect canvas for all kinds of toppings. Anything goes; pulled pork, jalapeรฑos, crispy bacon, melty cheese, spicy chorizo, caramelized onions, tangy pickles, truffle mayo, smoky BBQ sauce, garlic aioli, sriracha drizzleโฆ you name it!
For our Loaded French Fries, we took inspiration from a legendary Belgian street food classic: a meatloaf-style sausage smothered in curry ketchup and raw onions. Since those sausages arenโt always easy to find, weโre going all in with juicy meatballs, curry ketchup, creamy mayo, and fresh herbs.
Messy, saucy, and ridiculously good!

- Ketchup: a simple must-have!
- Sea Salt
- Curry Powder: Madras curry powder brings a bold, spicy kick.
- Honey: standard liquid honey adds sweetness without extra sugar.
- Mayonnaise: store bought is perfectly fine, but we love our homemade Mayonnaise Maison.
- Sauce Algรฉrienne: a spicy Belgian classic – check out our Sauce Algรฉrienne recipe!.
- Green Onion: fresh spring onion for a crisp, refreshing bite.
- Shallot: adds mild, sweet onion flavor.
- Meat Balls: use your favorite kind!
- French Fries: frozen works great, or make fresh Frietjes from scratch if youโve got time!
- Garden Cress: brings a fresh, mustardy kick.
How To Make Loaded French Fries
Cut
Start by cutting the meatballs in half.
Chop
Then, finely chop the shallot and green onion. Snip your garden cress right at the base of the stem.
Mix
Mix the ketchup, curry powder, and honey until smooth.
Fry
Deep-fry the fries according to the package instructions or our Frietjes recipe. Let them drain on baking paper. In the meantime, deep-fry the halved meatballs for about 2 minutes or until golden brown.
Pile it!
First, spread the fries on a platter and sprinkle with a pinch of sea salt.
Then, add the crispy fried meatballs, drizzle with mayo and curry ketchup, and top with shallots.
Finish it off with small dots of Sauce Algรฉrienne for extra kick, plus fresh green onions and garden cress.

- Extra Sauces: Serve extra mayo, Sauce Algรฉrienne or curry ketchup on the side.
- Side Salad: Pair it with a light side salad for balance; a simple arugula salad with a lemon vinaigrette, a crispy cabbage slaw with vinegar or a fresh and juicy tomato and onion salad.
- Separate Bowls:ย We’ve turned this recipe into a sharing dish, but of course no one’s stopping you from piling up personal plates or bowls and keeping all that crispy, saucy goodness to yourself!

Substitutions & Variations
- Sausage: If you can find a meatloaf sausage, go for it! Just cut it in half lengthwise before deep-frying.
- Fries: Use different fries like sweet potato, waffle fries or steak fries…
- Toppings: A really nice variation are loaded French Fries topped with melted cheese, crispy bacon, tangy pickles, golden fried onions, and sriracha for a spicy kick…
- To make melted cheese for fries, simply heat your cheese (cheddar, Gouda, or a cheese of choice) in a saucepan over low heat with a splash of milk or cream until smooth and melted. Stir occasionally to prevent burning. Drizzle it over your fries once it’s creamy and pourable!
- Vegetarian Twist: Swap in vegetarian meatballs or crispy fried halloumi and drizzle with vegan mayo!
- Air Fryer: Pop those frozen fries in the air fryer for 15-20 minutes at 350ยฐF (180ยฐC), giving them a shake halfway for that perfect crisp! Defrost frozen meatballs for cutting before frying. Then air fry them at 350ยฐF (180ยฐC) for 6-8 minutes.
FAQs
You canโt make Loaded French Fries ahead since they have both cooked and raw ingredients, but you can prep everything! Just assemble it all, and when you’re ready, bake and load them up!
It’s best to eat it fresh, or you’ll end up with heated mayo or soggy raw fries ๐ …
