What Is Mazapán?

Mazapán, or ‘marzipan’ in English, has a rich history that traces back to the Middle East. The Moors introduced almonds, originally from Asia, and almond-based sweets to Europe during their rule in Spain. Later, the Mazapán recipe, made with just almonds, sugar, and egg whites, spread across Europe and so it became a beloved delicacy, inspiring countless variations and uses. And today, marzipan is cherished worldwide for its creamy, nutty flavor and endless possibilities. It can be shaped into festive forms for holidays or used as a base for cookies and cakes. We use more almond flour than sugar for the best taste and we add a touch of lemon drops to give it a delightful zing. Mazapán is a delicious treat that puts a smile on everyone’s face!

  • Almond flour: It’s the key to Mazapán, the fresher, the better – so be sure to check the expiration date!
  • Lemon: We use a squeeze of fresh lemon.
  • Egg: Use a super fresh egg, as it will be used raw.
  • Powdered sugar

How To Make Mazapán

Sift

First of all, put the almond flour in a large bowl and sift the powdered sugar over it. We sift the sugar to avoid lumps.

Egg white & Lemon juice

Then, crack the egg, separate the yolk, and squeeze the lemon. Measure out the correct amount of lemon juice and add it along with the egg white to the bowl.

Knead

Knead the mixture thoroughly until the ingredients are well combined.

Rest

Mazapán

Wrap it in cellophane and let it rest in the refrigerator for about an hour.

Shape

Finally, remove the Mazapán from the fridge and shape it as desired; we make a large log - it's a classic shape and easy to cut into bite-sized pieces!

Serving Tips & Pairings

  • Chocolate dips: Slice the Mazapán and dip it in melted chocolate, lay them out on parchment paper and let them chill in the fridge for about 20 minutes.
  • Marzipan Potatoes: In Belgium, we have a tradition of rolling marzipan balls in cacao powder, making them look like little potatoes… so delicious!
  • Marzipan Cookies: Make the bést and easiest cookies of it, try our crisp and soft Biscotti alle Mandorle.
  • Cakes and pastries: Use marzipan as a base or finishing touch for all types of baked goods.
  • Salted Almonds: Serve Mazapán with salted almonds for a fun and flavorful contrast.
  • Drinks:
    • Mazapán is a lovely treat with an espresso or a classic cup of tea! And it’s delicious with Limonata!
    • Sweet wines like Sauternes or Moscato go great with it, or try Amaretto to boost Mazapán’s almond flavor.

Substitutions & Variations

  • Sugar: Swap the powdered sugar for any type of sugar—cane, coconut, regular, or your favorite. It will change the flavor and texture, but it’ll still be delicious!
  • Sugarfree: Use a sugar substitute for a sugar-free marzipan.
  • Eggwhite: You can use pasteurized egg whites if you prefer.
  • Vegan: Replace egg white with 3 tablespoons of aquafaba or water. Add it during kneading, teaspoon by teaspoon, until you reach the desired consistency.
  • Lemon: If you don’t have a lemon on hand or don’t like it, it’s not essential. On the other hand, for an extra refreshing and citrusy twist, you can even add some lemon zest or orange zest.
  • Mix: Knead some cacao or matcha powder in the marzipan for a beautiful and delicious twist!
  • Bake: A great way to enjoy your Mazapán is by baking it – try making Biscotti alle Mandorle!

The way to pronounce it is ‘mah-sah-pahn’, with the stress on ‘pahn’.
