- Angostura: Angostura bitters adds extra depth and bitter complexity and enhances the rum and Lillet Rouge.
- Lillet Rouge: We add Lillet Rouge to our Rum Sour for its distinctive flavors, which include notes of fruits, spices, and herbs.
- Rum: We use a good-quality dark rum for its rich flavor, which pairs perfectly with the zestiness of Rum Sour.
- Egg: As we use raw egg, ensuring it’s super fresh is crucial!
- Lemon: Fresh lemon juice makes all the difference.
- Maple Syrup: Maple syrup has a rich, complex sweetness that adds depth and a hint of natural earthiness.
How To Make Rum Sour
Shake!
Firstly, combine rum, lemon juice, maple syrup, a drop of Angostura bitters, and the egg white in a shaker. Close the shaker tightly and shake vigorously for about 30 seconds.
Pour
Now grab a nice glass and add ice cubes. Then carefully pour the shaker's mix over the ice cubes - pour gently to maintain the drink's texture and presentation. Finally, slowly pour Lillet Rouge over the back of a spoon to create a nice red Lillet float.
Finish!
Finish your Rum Sour with a sprig of fresh thyme or a twist of lemon peel for a perfect cocktail experience!

Serving Tips & Pairings
- Garnish: Besides thyme or lemon peel, you can experiment with other garnishes like fresh mint, a twist of orange peel, some fresh lavender flowers or a maraschino cherry…
- Roasted nuts: Cocktails and nuts? Definitely!
- Appetizer: Scampis Diaboliques make a great and fancy savory appetizer with Rum Sour. Or try a slice of Mazapán dipped in chocolate!
Substitutions & Variations
- Sweetener: Swap maple syrup for simple syrup or honey.
- Lemon: While lemon juice is traditional, you can also experiment with lime juice or tangerine juice for a citrus twist.
- Lillet float: Instead of Lillet Rouge, you can try vermouth or red whine, like Cabernet Sauvignon for a different float on top!
- Vegan: Just leave out egg white!
